For as long as I can remember the turkey was always the centerpiece at our Thanksgiving dinner, but it was the sides that we fought over. My sister went for the mac and potatoes, my brother the dressing, but for me it has always been broccoli cheese casserole. If you are looking to add a new side for thanksgiving here you go, and the best part of this amazing dish... it goes great with smoked meats as well. Enjoy.
1.25 lbs broccoli ( Fresh preferred but can do Frozen)
1 can cream of mushroom or chicken soup
1 can sliced water chestnuts (optional)
1 C. grated sharp cheddar
½ C. mayonnaise
1 stick melted butter
1 stick (large roll) Ritz cracker crushed
Cook broccoli; drain. Combine broccoli, soup, water chestnuts, cheese, and mayonnaise together and pour into a greased casserole dish (9” by 13”). Combine butter and crushed cracker, then spread on top of casserole. Bake in 350* oven for 35 minutes until crackers are golden brown and casserole is bubbling. Serves 6 to 8.
