Smoked Turkey 101

Thanksgiving is right around the corner and for most of us it sneaks up too quickly. Planning may start the afternoon before, or for some Thanksgiving dinner ends up being Chinese take out. Either way it is never too late for the ominous turkey that we all want. Please hear me say this... anyone can smoke a turkey. It is easy and you do not need a PSA by Robert Shanter for safety. 

Here are the top 5 ways to make sure your turkey is smoked to perfection.

1. Cook it in an aluminum pan.

All the juice ends up here. It helps keep the turkey moist and tender. You also now have some juice for the stuffing. Make sure your pan fits the turkey well. Juice can overflow if the pan is too small. 

2. Keep the rub simple. 

Think: salt, pepper, paprika, garlic. Here is the catch, herbs are important too and the fresher they are the better flavor your going to get. Rosemary, sage, and basil, are just a few I have used before. Pick one, these are some strong flavors.  

3. Fruit wood is key.

Apple, Cherry, Apricot, Peach. These will add that sweet flavor to the smoke. They will also help bring out the flavor of the fresh herbs. 

4.  A fresh bird is the way to go.

Waiting til the last minute to get a turkey does have it rewards. Most of the frozen Turkey's are gone anyway. 

5. Time it right 

A 12-14 lb. fresh turkey only takes about 3-4 hours in the smoker. If you know when you want it done by, back your time up so you are able to go straight from the smoker to the table. Your guests will be impressed.
