Paleo Que is not new. It isn't even recently new. So what is the basis of this thing. It is simply doing what our first ancestors did many years ago. Hunt, gather, and smoke it. July 28th 2012 Righteous 'Que got to do just that. Well maybe not to the full extent of Hunting and gathering (I did hunt to find the best price on meat, not sure if that counts). We sure did take the time to smoke it. So what was on the Paleo menu, Pork, Brisket, Turkey with Smoked Sweet Potatoes and a Cucumber Tomato salad with a country vinaigrette. So if you haven't smoked some sweet potato you are really missing out. The recipes for the sides are below and easy. As for the meat, no matter healthy or not make sure its Righteous 'Que.
Smoked Sweet Potato - Wash Place in foil or tin pan. Place on grill with indirect heat. Should run about 275 degrees for about 2.5 hours. Remember to soak your wood chips to get that good smokey flavor from the grill. I added nothing else but I did offer some butter. I didn't think they needed anything else. Another great Idea is also to stick these guys right in the coals (and It doesn't take 3 hours).
Cucumber Tomato Salad - I used cherry tomatoes and cut them in half with Cucumber chunks. I bought a spice pack for the vinaigrette at my favorite spice store (Penzey's). The spice bag had the recipe on the bag. I substituted white wine vinegar for red and added the olive oil. Put the vinaigrette in the fridge for about an hour. Then shake well and add to the Salad.
