The Day After

Oh am I excited about tomorrow!! The 4th of July is such a great holiday. Celebrating our Nations independence. Showing thanks to all those veterans and active duty military that have fought and currently fight for our freedom. It is also a great day to just be with family and.....Yep Grill it!. Smoke It! Or what ever your tradition is. It is just a great day! But have you considered the day after. Most of the time there are no left overs. Your stuff was so Righteous you ran out fast. Well here is my top idea for getting the most out of your left over 'Que, if there is any. Oh and thanks for the idea KRAFT.

Creamy Enchilades

2.5 cups of your left over Meat (Chicken, Beef, Pork, or Ribs)
1 Can cream of Chicken, or Cream of Mushroom with beef, pork or ribs
1 cup sour cream
1 pkg of Kraft Shredded Cheese (you pick, but Colby Monterey Jack recommended)
1/4 cup cilantro
12 Tortilla's

Preheat oven to 350

Dice up the meat and then add all ingredients in a bowl and combine.  Then spoon out mixture into tortillas and roll up. Place seem down in greased baking dish. Top with salsa and cheese

Bake for 25 minutes and enjoy!

This might be leaning a little towards Cinco De Mayo, but your able to continue to enjoy that Righteous 'Que.
